Cashew Nut

The Cashew Nut tree is a tropical evergreen tree that produces the cashew seed and the cashew apple. Cashew trees are attractive trees with large leaves and pretty, pink flowers. The cashew seed hangs from the bottom of a Cashew Apple or locally know as the Monkey Cherry, essentially a swollen stem. A hard shell with two layers encases the kidney-shaped cashew seed, which must be harvested by hand. Cashew apples and nuts are highly nutritious, they contain high amounts of vitamin C and are excellent sources of calcium, iron and vitamin B1.
